Steel-Cut Overnight Oats

This has to be the simplest way to make steel cut oats.  Throw all the ingredients into a mason jar or tupperware, mix well, and place in the fridge overnight.  In the morning you will have a hearty healthy breakfast packed with fiber, vitamins, and nutrients… in a jar (no cooking required)!  This is certainly a breakfast that will keep you feeling full and satisfied straight through until lunch.  If you have never tried overnight oats you should give this a go!

This is so easy, here is what you need:

Combine all of the ingredients together either in a bowl or tupperware container, toss it in the fridge,and forget about it until morning.  The texture in the morning will be chewy with a nutty flavour (think grape nuts cereal and milk).

Steel-Cut Overnight Oats 

Ingredients:

Serves 1

1/3 cup steel cut oats (you could also use old fashioned rolled oats – the consistancy will be different, though)

1/3 cup unsweetened almond milk (soy or regular milk works prefectly fine too)

1/3 cup plain non-fat yogurt (I like to use Greek because it’s thick, creamy, and high in protein)

1/2 banana, thinly sliced

1/2 tbs chia seeds

2 tiny drops of vanilla flavoured stevia (or just use a 1/4 tsp of vanilla extract)

1/4 cup pumpkin puree (optional – substitute with frozen berries if you would prefer)

pinch of salt

cinnamon

(oatmeal topping suggestions: granola, almond butter, peanut butter, more sliced banana, chopped nuts, dried fruit, etc, etc.)
